Capon, with its distinct appellation since 1957, offers a unique taste experience. Originating from various French regions, the Chapon de Bresse, aged at least 8 months and reared for 7 months in the open air, is a poultry with a strong character and tender flesh. Among the many ways it can be cooked, capon in yellow wine remains an emblematic recipe.

Savour the culinary experience to the full by choosing the perfect wines to accompany a roast capon. Traditionally, a supple, fruity red wine is the classic accompaniment.

 

  • A Saumur de Champigny, made from the Cabernet Franc grape or enhanced with Cabernet Sauvignon, offers aromas of red and black fruits, enhanced by spicy notes of cloves, in perfect harmony with capon roasted in butter or stuffed with chestnuts.
  • Burgundy red wines, such as Nuits-Saint-Georges from Domaines Dominique Laurent, Trapet and Chavy Chouet, provide a more tannic structure.

Partner estates such as Michel Bouzereau and Louis Latour offer buttery, fruity wines with notes of citrus and exotic fruit. For special occasions, a vinous champagne with aromas of brioche and candied fruit or a Côte-Rôtie wine are outstanding choices.

  

Which wines go with capon with morel mushrooms? 

Food and wine pairings with other capon preparations are just as exquisite. For a capon with yellow wine and morels, dry white Burgundy wines such as Chassagne-Montrachet, Puligny-Montrachet or Meursault are recommended.
