The vineyard is planted on a clay-limestone terroir, with 40-year-old vines. The grapes are harvested by hand and then automatically pressed. Rigorous temperature control is applied during vinification. Fermentation, both alcoholic and malolactic, takes place in barrels, 30% of which are new.
The wine is then matured for 12 months in oak barrels. It will be ideal for drinking from 2024 onwards, with a peak between 2026 and 2032, and possible cellaring beyond 2034. It should be served straight from the bottle at a temperature of 12°C.
This Chardonnay, made from vines planted in marl-limestone soils, reveals great freshness and retains the typical character of the Saint-Romain terroir thanks to a measured use of new oak (20%). In 2023, ‘Les Craies’ is distinguished by more fleshy aromas than in 2022, while retaining a marked minerality and fine balance. On the palate, there are notes of gunflint, chalk, lime blossom, citron and toasted brioche. The texture is voluptuous, with a remarkably saline finish.
For a gourmet match, this wine is the perfect accompaniment to cuttlefish risotto with wild asparagus and aged parmesan.
