Domaine Buisson has been certified biodynamic since 2018. Within the St-Romain appellation, the Buisson vineyard covers seven climats - five whites, two reds. From two of these, they also produce a red and white cuvée without added sulphur, Absolu, which is made in exactly the same way as their conventional cuvées from the same sites. The St-Romain appellation represents about a quarter of the Buissons' vineyard. Rather than being located on the main escarpment of the Côte d'Or, like most other wine villages in the Côte de Beaune, St-Romain is situated about 3 km west of Meursault and just north of Auxey-Duresses in its own south-facing cul-de-sac valley. Saint-Romain is one of the highest villages in altitude on the Côte de Beaune. This has given it a reputation for producing shallower wines than, for example, Meursault or Puligny, but with the effects of global warming, this no longer seems to be the case. On the western side of the valley, where the famous climats of Sous la Velle and Sous le Château are located, the soils have a higher proportion of marl and typical creamy limestone; this is where the Buissons grow Chardonnay. On the opposite slope, where the vast expanse of the Sous Roche climate meets Combe Bazin, the soils have a higher iron content in the clay, which is more favourable to pinot.
