- Tasting: "Concentrated and smooth, with good energy, this full-bodied red has a core of sweet black cherry, burnt tobacco, wood spice and warm plums wrapped in an iron backbone. It reveals notes of incense and violets, and while the tannins are not too tight, it still needs time to unfold its tight layers."
THE DOMAIN TELLS YOU ABOUT IT
'A great classic. This is the oldest of the Domaine's cuvées, created in the 1970s to enhance the old family vineyard. The vines for this cuvée are located in the heart of the appellation opposite our first replantings. Les Vieilles Vignes is the mirror of our history and know-how.
TERROIR
Located on hillsides at an altitude of about 200 meters, with a south/southeast exposure, the vines of our classic are 60 years old on average. They are deeply rooted on old and very degraded granites, locally called gores.
VINIFICATION
- Certified organic vineyard and wine for the 2016 vintage and biodynamic farming.
- Syrah grape variety grown in goblet on stakes.
- Manual harvesting.
- Partial de-stemming of the grapes with 20% whole grapes.
- Fermentation with indigenous yeasts, and maceration of several weeks in stainless steel tanks, with punching down and pumping over twice a day.
- Aged in 228 liter barrels for 20 months, 15 to 20% new barrels.
- Reduced sulphiting - total SO2 44 mg/l (authorized in organic : 100 mg/litre)
- Ageing potential : 20 years
