Tasting notes: (Apr 16, 2024) - ‘A delicious, fleshy, textured St. Joseph. Notes of black cherry, grilled meat, ash and crushed peppercorns. Quite full-bodied, with fine tannins. Velvety texture with a juicy core of red berries and spices. Black cherry character with a fresh, juicy finish. Drink now or cellar.

Vinification and maturing : The vines are located on the granite hillsides of the communes of Mauves and Tournon. The grapes are harvested by hand and brought whole to the winery. The grapes are then about 70% de-stemmed. Fermentation takes place in open vats with punching down and pumping over twice a day for about two to three weeks. The wine is matured for one year in 228 and 600 litre oak barrels. Malolactic fermentation takes place during the winter. Then, the wines are racked and bottled in December, after a year's ageing.
