Vinification and maturing: The vines are harvested by hand. The grapes are brought whole to the winery, then 70% de-stemmed. Fermentation takes place in open vats with punching down and pumping over twice a day for about two to three weeks. The wine is aged for one year in 228-litre oak barrels. Malolactic fermentation takes place in these barrels during the ageing process. Bottling takes place during the winter.
History :This cuvée comes from the oldest vines of the Domaine, located on the granite hillside of the Lieu-dit "Saint Joseph" in the commune of Tournon. The quality of the terroir and the age of the vines give this cuvée an exceptional character. The wine is round, tannic and concentrated, to be drunk from 4 or 5 years old.
