Calcareous and clayey soils colored in red by iron oxides confer to Pommard wines color, solidity and exemplary aromatic expression. Victor Hugo was not mistaken wrote of the wines of Pommard that they "have breath, inspiration and sometimes inspiration and sometimes genius".

- TASTING NOTE: Intense aromas of black berries with a more animal note. Firm and solid wine that needs a little patience to tame the ardor of its youth. Very good ageing potential.
- WINE AND FOOD Pairings : Red meat in sauce, venison, strong cheeses.
- TEMPERATURE : Between 17°C and 18°C
- AGEING POTENTIAL : 7 to 10 years and more
- HARVESTING : By hand, in small boxes of 13 kg. Careful manual sorting of each bunch.
- VINIFICATION : After a total or partial de-stemming according to the vintage, fermentation in small containers and a soft pressing ensure an optimal vinification. Depending on the profile of the vintage, the vatting can last from 15 to 20 days.
- AGEING : 12 to 14 months in French oak barrels, with 30 to 40% new barrels.
- AGEING : The cellars of the Bastions of the old Château de Beaune offer natural conditions perfectly adapted to the ageing of the Premiers Crus.
