Chablis Grand Cru 2009 - Les Clos - Maison Louis Latour
In spite of the enormous area in production, Chablis currently produces less than 5% of what it produced a century ago. Lower yields and improved viticulture techniques have made this wine a long-term favourite. Chablis "Les Clos" is the most extensive Grand Cru. It is located on a hillside exposed from south-east to south-west. The depth of the land gives a wine that is consistent and, above all, very long to develop.
Vinification & Maturing :
Traditional fermentation in stainless steel vats, controlled temperature, 100% malolactic.
Maturing: 8 to 10 months in stainless steel vats.
Tasting note: This wine will delight you with its aromas of fresh butter and vanilla. An ample wine on the palate with a nice minerality.
Food/wine pairings: Oysters - fish - shellfish - goat cheese.
