Tasted by J.S. in 2023: "Lots of crisp red cherries and blue plums followed by violets, fresh sage and Christmas spices with baking spices and coconut. Medium to full-bodied, with superb, racy, fine-grained tannins and refreshing acidity that gives it bite. Magnificently fine and elegant, it is harmonious and precise. Delicious too. It's already drinkable, but it needs a few more years to come into its own. Try it after 2026 and it should remain magnificent for a long time."

It is classified as a Grand Cru Classé, one of the most prestigious classifications in Bordeaux. The winery is located near the village of Saint-Émilion and benefits from an exceptional terroir for wine production.

Château Canon is best known for its red wines, made from Merlot, Cabernet Franc and, to a lesser extent, Cabernet Sauvignon. Merlot is the dominant grape variety, bringing richness, roundness and structure to the wines. Cabernet Franc adds complex aromas and elegant tannins, while Cabernet Sauvignon can add power and longevity to the wines.
Château Canon wines are characterized by elegance, finesse and balance. They offer aromas of ripe red fruit, blackcurrant and violet, as well as spicy, woody notes resulting from ageing in oak barrels. On the palate, the wines are generally silky, with well-integrated tannins and good acidity.
