Tasting notes :
Château Carbonnieux 1989 is a wine characterised by its maturity and elegance. With over 30 years of ageing, it has had time to develop complex aromas and a well-balanced structure.
This wine reveals aromas of ripe black fruit such as plum and black cherry, as well as hints of blackcurrant. Aromas of undergrowth, tobacco, leather and sweet spices such as cinnamon and vanilla may also be present. The tannins should be well blended, giving a silky texture on the palate.
Food and wine pairing:
Given that Château Carbonnieux 1989 is a rich, complex red wine, it pairs well with flavoursome, structured dishes.
Grilled or roasted red meats: A good steak, filet mignon or roast beef will be magnified by the flavours and texture of the wine.
Game meats: Game meats such as duck, partridge or venison will blend harmoniously with the fruit and spice aromas of the wine.
Aged cheeses : Hard cheeses such as Comté, Gouda or Parmesan will be an excellent complement to the characteristics of Château Carbonnieux 1989.
Serving temperature:
To fully appreciate this wine, we recommend opening the bottle at least two hours in advance and serving it at a temperature of between 16°C and 18°C. This will allow the aromatic bouquet to develop and the flavours to express themselves fully.
