GEOLOGICAL FEATURES
Kimmeridgian limestones at Exogyra virgula are here particularly present in the basement with sometimes compact slabs. On the surface, the clays are sticky, difficult to work after the rain.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts partly in stainless steel tanks and partly in barrels.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
Our Vaillons is the assembly of 5 climates (Epinottes, Roncières, Séchet, Chatains and Beugnons). It is a very classic wine with notes of white flowers and iodine. Its very sunny exposure and its valley sheltered from the North winds give it a rather early maturity allowing to appreciate it from the first years. It does not have the usual austerity of young Chablis.
With the years, the wine loses its floral aspect to the benefit of tertiary aromas of menthol and oyster shell. It can be matched with all seafood products but also with regional cheeses.
