GEOLOGICAL FEATURES
Located on a plateau with a gentle slope, the soil is dominated by Kimmeridgian marls. They are shallow and rest on unfragmented slabs that often make working the soil difficult.
VITICULTURE
Viticulture in integrated pest management. Soil maintenance through regular ploughing.
VINIFICATION
Pneumatic pressing. Enzymatic settling 12 to 24 hours at 15°C then fermentation in indigenous yeasts in stainless steel tanks.
Systematic malolactic fermentation and blending after 8 to 10 months. Fining if necessary, light filtration and bottling.
TASTING / AGREEMENTS
The shallow depth of the soil allows the acid structure to express itself with a powerful wine in attack but not fat, developing a great freshness throughout the tasting. The minerality is strong, expressing itself from the nose on notes of wet stone. In a sunnier year, we find notes of white and yellow citrus fruits.
Always a little secretive and reserved in its youth, Vaucoupin is a wine for laying down which takes all its dimension after 10 years and more. Perfect accompaniment with oysters or seafood.
