- Chablis is a reference appellation throughout the world. The plots of land of the Domaine William Fèvre rest on a Kimmeridgian subsoil and benefit from ideal exposure conditions to give life to a very great wine.
- GRAPE VARIETIES: Chardonnay
- SOIL : Marl and clayey limestone of the Kimmeridgian
- APPELLATION AREA: 3400 hectares
- TASTING NOTE: A fresh and elegant bouquet with citrus notes of citrus, white fruits and flowers. Fresh and supple on the palate. Fresh and supple on the palate with a nice minerality.
- FOOD & WINE Pairings: Grilled fish or fish in light sauce, seafood, oysters, sushi.
- PERFECT Pairing: Salmon tartar.
- TEMPERATURE : Between 12°C and 14°C
- HARVESTING: By hand.
- VINIFICATION : Use of the principle of gravity to avoid any pumping over which could be detrimental to the quality of the wine. Short pneumatic pressing (1h30 to 2h00) for a delicate separation between the solid and liquid parts of the grapes. Very light static settling in order to keep enough fine lees for the alcoholic and malolactic fermentations to take place naturally. The must is placed in small stainless steel vats.
- AGEING: 8 to 10 months, in small stainless steel vats to preserve freshness.
