The clay and limestone soils, dotted with fragments of millstone (flint), come from very early plots of Cumières. The average age of the vineyard is 45 years, covering the years 2011-2013-2014-2015-2018-2019 in half-bottle and bottle formats.
Vinification:
The grapes are harvested by hand, followed by a rigorous selection process. Cold maceration, vinification in open oak vats with punching down and pumping over, and ageing for 18 to 24 months in demi-muids and barrels precede conservation in stainless steel vats, in a cellar at constant temperature. Malolactic fermentation takes place in barrels. No fining or filtration is carried out.

Its deep, brilliant red colour reveals a nose typical of Pinot Noir from the Cumières terroir, with hints of morello cherry. On the palate, the combination of red fruit and silky tannins creates a delicious balance.
The red wines of Champagne have been renowned since the very beginning of the history of the Champagne region. Cumières' ability to produce red wine stems mainly from the quality of its terroir. The soils, mainly limestone or clay-limestone, are ideal for Cumières Pinot Noirs, particularly those with "Griotte" characteristics. In our northern vineyards, the production of a red wine varies according to the conditions of the year. As a result, our policy is to adjust the quantity of red wine according to the quality of the harvest. It sometimes happens that the production of Cumières Rouge is completely ruled out.
Roger Geoffroy initiated the creation of this wine. Seventy years later, we still take great pleasure in demonstrating that Champagne is also a great terroir for red wine.

The delicate structure of this Cumières Rouge makes it the ideal partner for white meats, particularly roast meats.
