The Origine Blanc de Noirs cuvée from Champagne J.M. Goulard is a refined expression of the terroir of the Massif de Saint-Thierry, near Reims. Produced using environmentally friendly viticulture. Part of the vinification (50%) takes place in oak barrels, giving the wine additional richness and complexity. After aging on lees for 24 months, the wine reveals an extra-brut dosage of 4 g/l, highlighting a lively and elegant structure.
The tasting reveals inviting aromas of raspberry jam, white flowers and candied orange. On the palate, the attack is both tasty and delicate, evolving towards gourmet notes of peach flesh and mango, balanced by a well-integrated acidity. The finish is fine, silky, and persistent, offering an overall impression of freshness. This Champagne is ideally accompanied by a fine fish soup, sautéed shellfish with orange or fresh goat cheese.
