Tasted by William Kelley on October 21, 2021: "Offering aromas of honeycomb, warm cookies, red berries and spice, the newly released 2008 Celebris Rosé Extra Brut is full-bodied, with a concentrated, even expansive mid-palate; but while this Celebris Rosé leads with its voluminous core of fruit, it's its tangy backbone and tight structure that dominate the dry finish. It will require some patience, but it's an impressive effort on Gosset's part."
Traditional vinification and aging on lees avoiding premature oxidation. Malolactic fermentation is carefully avoided in order to preserve the wines' naturally fruity aroma and ensure perfect conservation.
Aging of at least 10 years in the cellar to obtain a complex and fruity wine.
Tasting : Rosé tuna, roasted scampi, lobster, lightly rosé veal, suckling or pre-salted lamb, wild salmon but also on desserts based on strawberries, raspberries, or rosé grapefruit...
