"Tasted in the second quarter of 2022 at a dosage of 3.75 grams per litre, the 2009 Brut Blanc de Blancs Cuvée Louis Salmon reveals aromas of pear, lemon oil, mandarin oil, white pepper, pastry and almonds. Medium to full-bodied, chiselled and long, it has a crystalline, vinous texture with a fresh, saline finish. It is the quintessence of the Billecart style, characterised by racy acidity and a lively palate. It is made from Chardonnay grapes from the villages of Mesnil-sur-Oger, Chouilly and Cramant and has been aged exclusively in steel vats."

Its natural balance offers a harmonious model, made from the best parcels of the Côte des Blancs Grands Crus, notably Cramant and Chouilly for their finesse, and Mesnil-sur-Oger for their structure and longevity. This pure, intense Grand Blanc de Blancs stands out for its perfect uprightness, magnificently combined with a low dosage. Its potential and balance are reflected in its remarkable finesse, worthy of the most exquisite pairings, such as Corrèze veal sweetbreads en cocotte, Brittany abalone and samphire mushrooms.
