97/100 James Suckling

When to drink this wine : 2023 to 2040+.

Tasted in July 2023: "On the nose, a fragrance of apple, green mango, perfume and honeysuckle. A fairly full-bodied Champagne with a creamy, well-integrated texture and a subtle finish. Bitter, botanical and intense. To drink or to keep. J.S.

What the estate has to say

  • Élaboration : Only the best grapes from a single year are selected.
  • Each vintage is unique, reinterpreting the uniqueness of the seasons. Dom Pérignon dares not declare a vintage if the result is not exceptional.
  • After more than eight years in the cellar, the wine reflects the perfect balance of Dom Pérignon, its greatest promise.

Do you know Dom Pérignon?

Champagne Dom Pérignon is one of the world's most prestigious and renowned champagnes. It takes its name from the famous Benedictine monk Dom Pérignon, who played a key role in developing winemaking techniques in the Champagne region in the 17th century. Dom Pérignon is produced by Champagne house Moët & Chandon, located in Épernay, France.

The wine :

Dom Pérignon is a vintage champagne, which means it is made only from grapes harvested in one exceptional year. Each Dom Pérignon vintage is unique, reflecting the specific characteristics of that year. Champagne's traditional grape varieties, Chardonnay and Pinot Noir, are used in the Dom Pérignon blend, giving the wine remarkable complexity and aromatic richness.

Production:

The Dom Pérignon production process is rigorous and based on traditional methods. After the first fermentation, the wine is bottled with a liqueur de tirage for a second fermentation in the bottle. It is then aged for at least seven years on its lees, giving it its finesse and creamy texture. Each bottle of Dom Pérignon is then disgorged by hand and given a dose of liqueur d'expédition, which regulates the champagne's level of sweetness.

How to serve Dom Pérignon Champagne ?

To serve Dom Pérignon, we recommend cooling to a temperature of 8-10 degrees Celsius. Once the bottle has been opened, use a champagne flute to preserve the wine's delicate aromas and fine bubbles. Pour champagne slowly and at an angle to avoid excessive effervescence. Allow the wine to air in the glass for a few minutes to release all its aromas.

Food pairing with Dom Pérignon :

Dom Pérignon goes perfectly with delicate, refined dishes. Seafood such as oysters, langoustines and scallops bring out the freshness and minerality of the champagne. Fish dishes, such as smoked salmon or turbot, also go very well with Dom Pérignon. Poultry dishes and mild cheeses like Brie also complement Champagne.

When to drink it ?

Dom Pérignon is a wine that can be enjoyed as soon as it comes onto the market, but it also has exceptional aging potential. As it ages, it develops more complex aromas and an even creamier texture. Bottles of Dom Pérignon should be stored in a cool, dark place, away from direct sunlight, to preserve their quality.

In short, Dom Pérignon Champagne is a symbol of excellence and savoir-faire in the world of wine. Its exceptional quality, rigorous production process and refined taste make it the ideal choice for a prestige tasting.

I love this site. Whether it's for old wines, or recent ones. The choice of partner estates is impressive, and allocations are sold at fair prices. Ludovic's advice is always excellent.
