The cuvée
- Grape varieties: Chardonnay (50%), Pinot noir (50%)
- Vineyard: Chardonnay from Cramant, a Grand Cru in the Côte des Blancs with outcropping chalk; Pinot Noir from Boursault, a Grand Village in the Marne Valley with clay-limestone soil, vines averaging 50 years old.
- Vinification: Temperature-controlled stainless steel vats (18-20°C) for parcel-by-parcel vinification, 100% malolactic fermentation.
- Ageing: Bottled in April 2016, aged in our chalk cellars for 60 months.
- Dosage: 6 g/l
TASTING
This vintage Champagne is golden with amber highlights. The fine bubbles, softened by ageing, deliver the aromas in a ceaseless ballet.
- The harmony of the terroirs creates a complex palette of aromas. The first impression is of dried rose petals and fresh lime blossom. This is followed by a more indulgent world, with the voluptuousness of stewed raspberry, lightly toasted bread and milk caramel. The final baggage is dried fruit such as apricot and fig, supported by toasted hazelnut.
- The Pinot Noir harmoniously combines its generosity and voluptuousness with the minerality and salinity of the Chardonnay Grand Cru. An alliance between the structure and fruitiness of the Marne Valley and the lightness and elegance of the Côte des Blancs.
- This wine delicately reveals all its power, and while we're on the subject of wine, try decanting it to enhance its aromatic development. The harmony between its voluptuousness, fruitiness and lightness will go perfectly with slices of Bellota or foie gras cooked with ratafia and juniper berries. Try it with veal in white sauce, sprinkled with bay leaves and mustard seeds and cooked with a few plums.
