A family of winegrowers in Saint-Aubin since 1640, Hubert created his estate in 1973 with 7 hectares. A new winery was built in 1980 and enlarged in 2002. Olivier, his son joined him in 1998. The estate now cultivates 18.5 ha of which 10.8 ha are first growths in the communes of Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay.

Geology: Clay-limestone soil. Shallow soil. Eastern exposure. Mid-slope.

Origin of the name Chaumée: Land that remained fallow for a long time before being planted.

Viticulture: Pruning in guyot Poussard and small cup. Green pruning in May. No fertilizer for 16 years but amendments based on organic compost are made. Low yield. High trellising and bridge braiding (1.5 meter) for a larger leaf surface and small grapes. The whole estate is treated with low doses of natural products, sulphur or copper or by reasoned control (treatment with products that respect the existing fauna and that are applied only when necessary). The soil is ploughed about 4 times a year.

Vinification: Manual harvest in bins or small crates. Grapes are pressed very gently with a pneumatic press. No settling of the must. Reasoned chaptalization if necessary. Fermentation in barrels (300l) and demi-muids (600l) (Vosges, Allier and Troncais, 0% new and barrels from 1 to 10 years old). Temperature control in barrels. Very long fermentation: 90 days. No stirring

Ageing of the wine : The cellar is cold, hence the very slow evolution of the wines. FML in barrels. Racked in August (the wines are pushed with compressed air so never pumped). Homeopathic fining if necessary. Light filtration with kieselgur. Bottling (by gravity) after 24 months.

Quantity produced : 140 cases of 12 bottles.

Tasting note: Very pale color. Fine nose and grilled, vanilla, enhanced with notes of fresh fruit. Mouth round, powerful, rich and fresh finish. A wine for long ageing.
