VINES AND VITICULTURE
Grape variety : Chardonnay 100% - Average age : 30 years. Yield control, environmentally friendly cultivation, soil work, manual harvesting.
TASTING
The young wines evoke us white fruits (pear, peach...), white flowers (acacia). The wine is fresh, mineral, and balanced in the mouth with a touch of honey and grapefruit in the finish. As it ages, the aromas become more complex and dense, with a touch of butter, toast, and dried fruits, but still with the unctuous flavor of honey.
STORAGE
The best time to drink this wine depends on the natural acidity of the vintage, from 1 to 5 years after bottling.
FOOD AND WINE PAIRING
Serve between 12 and 15°C in fine crystal glasses. It is best served with scallops, fish in sauce or grilled, poultry, quenelles and of course andouillettes and goat cheese from the Mâconnais.
