TERROIR
- Average age of the vines: 18 years.
- Surface area: 1.52 ha
- Exposure: East. The soil is very exposed to erosion, very rich in limestone. The upper part of the slope is extremely stony; the lower part is richer in fine elements.
VINIFICATION
The grapes are harvested by hand to ensure quality. The harvest was sorted by hand and vinified at 35% whole grapes. Following the filling of the vat, a pre-fermentation cold maceration of 4 to 6 days at 10°C helps to extract the color of the skins. The natural fermentation then starts at 24°C and rises to 31°C in its final phase. The extraction of phenolic compounds is done with the help of punching downs, the intensity and number of which vary according to the quality of the grapes and therefore the vintage. The post-fermentation maceration helps to soften the tannins.
BREEDING
At devatting, free-run wine and press wine are carefully separated and aged separately. The wine is aged for 15 months in 100% oak barrels of which 25% are new.
