Mercurey Rouge 2023 - Château de Chamirey
TERROIR: 10 small village plots and 3 Premier Cru plots (En Sazenay; Champs-Martin; Clos L'Évêque) make up this Mercurey Rouge.
Climate & Soil: The plots are essentially clayey-limestone with a predominance of clay.
VINIFICATION :In order to ensure quality, the grapes are harvested by hand. Then the harvest is sorted by hand and partially or 100% destemmed depending on the vintage. After filling the vat, a pre-fermentation cold maceration of 4 to 6 days at 10°C helps us to extract the colour from the skins. Natural fermentation then starts at 24°C and rises to 31°C in its final phase. The extraction of the phonetic compounds is done with the help of pigeage, the intensity and number of which vary according to the quality of the grapes and therefore the vintage. The post-fermentation maceration helps us to soften the tannins.
TASTING : Beautiful purple colour. The nose develops notes of red berries such as redcurrant and wild strawberry. Nice balance between acidity and roundness. Fruity aromas are present.
SERVING & PRESERVATION: To be enjoyed at an ideal temperature of 13-14°C or kept for 5-8 years.
WINE AND FOOD Pairings : It is a perfect accompaniment to tartar, red meat and cold cuts.
