Tasted on 3 February 2023: ‘This wine has so much immediate red fruit charm and a touch of morello cherry.A little light and crisp for this appellation, but lovely restrained tannins support the fruit and harmonise the stony acidity.Very well conceived.Can be drunk now.
PRESENTATION OF THE CUVÉE
- Grapes: Red/Gamay
- Characteristics: This wine is a blend of our eight great Moulin à Vent terroirs: Rochegrès, Carquelin, Champ de Cour, Thorins, Vérillats, La Roche, La Rochelle and the Cellars. The depth and weathering of the pink granite, as well as the exposure, vary according to the plots.
- Vinification: Picked by hand in boxes, sorted and often destemmed, the grapes macerate slowly for three to four weeks. Punching down or pumping over punctuate the fermentation, depending on the nature of the vintage.
- Aging and bottling
- The wines are aged for 10 months in concrete vats and one-wine, two-wine and new oak barrels in our old 17th century cellar. The wood comes from the forests of Nivernais, Limousin and Allier.
