GROWING METHODS
Guyot pruning, tillage and grassing, inter-row cereal sowing, manure and compost, leaf thinning. Organic viticulture for more than 10 years and foliar support. Use of biodynamic preparations.
VINIFICATION / AGEING
Harvested when ripe, by plot area - Selective sorting on a vibrating and aerodynamic table - Destemming - Cold pre-fermentation maceration - Gentle vinification in temperature-controlled stainless steel vats for 4 weeks. Ageing: 30% in sulphur-free stainless steel vats, 10% in new 400-litre barrels, 30% in 400-litre one-wine barrels, 30% in 500-litre one-wine barrels.
