Tasting: Aromas of wild blackberries, blueberries, dried lavender, cloves and eucalyptus with gravel and cocoa butter. It's full-bodied with firm, powdery tannins. Polished and creamy with a core of ripe fruit that evolves into herbs, spices and chocolate. Fantastic concentration and seamless integration. Cellaring: Try it from 2024 and for 3 decades.
Vinification
The grapes are first sorted in the vineyard. The grapes are destemmed by hand, berry by berry, then sorted on a table. The grapes are gravity-fed into 30-70 hl wooden vats. Pre-fermentation maceration takes place at a low temperature (8°C), followed by manual punching of the cap. Maceration lasts between 30 and 40 days. The wine is gravity-fed directly into French oak barrels, where malolactic fermentation takes place. The wine is aged in barrels for 18 months.
