- Vineyard: On north-facing slopes, chalky scree soil.
- Average age: More than 50 years old (some parcels are more than 100 years old).
- Grape varieties: Grenache 45%, mourvèdre 30%, cinsaut 5%, "secondary" grape varieties 20% including syrah, castet, manosquin, carignan, various muscats.
- Harvest : Exclusively hand-picked, at full maturity, with sorting of the grapes, fermentation with indigenous yeasts and temperature control.
- Vinification : Light crushing with de-stemming, vatting in small vats with pumping over, maceration time 15 to 21 days. Pressing of the marcs on vertical hydraulic presses.
- Conservation & maturing : Exclusively in wood, first in small tuns for 8 months, then for one year in oak barrels of different ages, blended at bottling without filtration.

Château Simone is a winery located in the Palette region of Provence, in the south of France. It is renowned for producing one of the region's most emblematic wines.
- The Château Simone vineyard has existed for over two centuries, and has been run by the Rougier family since 1830. The estate covers some 20 hectares, with vines planted on clay-limestone and schist soils. The grape varieties grown are mainly Grenache, Mourvèdre, Syrah, Cinsault, Carignan, and a few other local varieties.
- Château Simone is known for its traditional approach to viticulture. The vines are grown using organic methods, and the grapes are harvested by hand. The estate is also renowned for its low yields, which enable the production of concentrated, high-quality wines.
