Tasting notes By Yohan Castaing : ‘Yquem's 2021 has a complex bouquet of rose, exotic fruit and tangerine mixed with spring flowers, rose and crème brûlée, followed by a fairly full-bodied palate, ample and homogeneous, suave and layered, with a deep core and a long finish defined by a delicate bitterness that offsets the 148 grams per litre of residual sugar. This blend of 65% Semillon and 35% Sauvignon Blanc was aged, as usual, in new barrels, but the new oak is perfectly integrated and barely perceptible.’
Terroir
The vineyard of Château Yquem has 113 hectares of vines. The terroir is at the highest altitude of Sauternes, which gives it a unique microclimate. The microclimate is critical, as it allows the easterly winds to move through the vineyard, helping to eliminate unwanted excess moisture, especially later in the growing season when noble rot sets in.
Service
It can be enjoyed young, although it should be decanted for at least one hour before drinking. The recommended serving temperature is between 10°C and 12°C. For the more experienced wine lovers, you can push the tasting experience over several days, in order to appreciate and follow the wine in its evolution.
It will be a wonderful accompaniment to a good fresh, slightly acidic lobster or a royal langoustine in a cream and lime sauce.
