Tasted by Joe Czerwinski: ‘This is a very seductive and delicious wine, with creamy peach and apple flavours, complemented by shortbread and dried herbs, on a nicely textured and heavy palate, supported by white tea tannins. It shows tension and energy, with accents of wet stone and ginger extending through the long, full-bodied finish.’

Presentation : This classic wine represents our main cuvée, characteristic of the estate's style.
Grape varieties : Grenache blanc 52%, Roussanne 21%, Clairette 27%.
Terroir : This cuvée is a blend of our best plots of Grenache blanc, Roussanne and Clairette on a soil of rolled pebbles and grey flinty limestone. Harvest: The grapes were harvested by hand between 28th August and 13th September 2018, depending on the ripeness of each variety.
Vinification: The grapes are picked by hand, early in the morning to keep freshness, sorted and put in boxes to limit crushing. The bunches are gently pressed in a pneumatic press. The musts are selected and then sent to the stainless steel vat room. After cold settling, the Clairettes and part of the Grenache are put into barrels to carry out the alcoholic fermentation.
Ageing: 8 months in barrels for part of the Clairette and Grenache (57% of the total volume in barrels).
Tasting : Pale gold colour with silvery tints. A nose opening up with notes of white flowers and sweet spices, followed by lightly toasted brioche. The attack is lively and frank, then the roundness brought by the ageing process envelops the taste buds. The finish is long and confirms the impression of minerality felt on the attack.
Food and wine pairing : serve at 11-12°C, as an aperitif, then follow with a St. Tropez carpaccio. Jacques with citrus fruit sauce, a grilled sea bass, or a nice truffle brouillade.
