- Blend: The white Grenaches come from the Crau plateau, the Clairettes, Roussanes and Bourboulencs from the Vallon de la Solitude. - 40% Roussanne - 35% Clairette - 20% Grenache blanc - 5% Bourboulenc.
- Vinification & Maturing: The grapes are harvested by hand early in the morning in 25 kg crates. The grapes are pressed after a short maceration on the skins. Fermentation and ageing take place in barrels for the Roussanne and Grenache Blanc. Clairette and Bourboulencs are vinified in vats. Malolactic fermentation is carried out on some of the Roussannes. 60% of this cuvée is matured in barrels on fine lees for 10 months.
