SOIL CHARACTERISTICS: Soil composed of sand and saffron (compacted sand) located in the area known as "Les Bédines".
ASSEMBLY : 75% Grenache - 25% Mourvèdre
VINIFICATION: Hand picked with sorting in the vineyard and then in the cellar. 100% de-stemming, then co-fermentation in wooden truncated cone vats by indigenous yeasts.
AGEING : In tuns (75%) and in demi-muids (25%) for 14 months.
TASTING : This wine has a pretty clear Amaranth red colour with purple reflections. The nose presents pretty aromas of red fruits, orange peel and salted butter. The palate is unctuous, fresh, with notes of cocoa seeds and cherries in brandy. Very nice balance, a lot of finesse and good length.
AGING SUGGESTIONS : Roast venison - Skewer of thrushes - Teal salmis.
