Château Chauvin exists today thanks to Victor Ondet, who acquired in 1890, when he was a Compagnon du Devoir and master dyer, this four-hectare property which already produced a highly appreciated wine. This man was able to perpetuate the wine-producing activity of Château Chauvin by passing on his savoir-faire to his descendants. In 1954, Château Chauvin is part of the first classification of Saint-Emilion wines. Since then, the Ondet family is still at the head of this 15-hectare estate thanks to two sisters: Béatrice Ondet and Marie-France Février. They have done exemplary work and have never ceased to hold the rank of this cru by notably buying more than two additional hectares of vines in 1988. Château Chauvin also benefits from the sound advice of Michel Rolland.
