Tasting by Stephan Reinhardt on 14 October 2021 : "The 2018 Anjou Violette is deep, rich and very intense but elegant on the nose, pure and refined, with aromas of black fruits, tea and kumquat. The palate is full-bodied, deep and generous, with a silky, refined and taut texture, a blend of Cabernet Franc and Cabernet Sauvignon that is one of the highlights of the vintage. Fabulous! A must buy! Tasted at the estate in June 2021."
- Vineyard
Soil: clay and silt soil composed of sandstone and red flint on tuffeau (limestone).
Age: cabernet franc: 45 to 55 years, cabernet sauvignon: 70 years.
Pruning: Cabernet Franc: mixed Guyot.
Cabernet Sauvignon: gobelet
Work: autumn shoeing, spring dehairing, ploughing and natural grassing.
Biodynamic applications, infusions and decoctions of plants. This work is done according to the rhythms of the biodynamic calendar.
Yields: Cabernet franc, about 40 hl/ha. Cabernet Sauvignon, about 35 hl/ha.
Harvesting: by hand in 12 kg boxes, sorting in the vineyard at optimum maturity.
- Vinification
Destemmed harvest, indigenous yeasts, maceration maceration for about thirty days without extraction. Pigeage light punching down, little pumping over, infusion work.
Pressing: gentle and slow in a pneumatic press.
- Ageing
12 months on fine lees in Burgundy rooms of 5 to 7 wines then 6 months in vats.
Blend: 2/3 Cabernet franc, 1/3 Cabernet sauvignon (in general, but it depends on the year, we years, we look for a balance)
Bottling: on the "fruit" day without filtration or fining
