Great wine of Saumur : Clos de l'Écotard

Michel Chevré worked alongside Thierry Germain as vineyard manager at Domaine des Roches Neuves in Saumur. Since 2007, in collaboration with Thierry Germain, he has developed three prestigious organically grown chenins on 3 hectares of south-facing limestone hillside: La Haie Nardin, Clos de l'Ecotard and Les Pentes.

 

Cultivated according to the rules of biology, its vines produce high quality grapes. During the harvest, the grapes are picked exclusively by hand before being pressed. Alcoholic fermentation takes place in the cellar, in barrels. The wine is aged for about 12 months on fine lees.
