- Clos des Fées Vieilles Vignes is a remarkable wine produced by the Clos des Fées estate, located in the Roussillon region of France. It is a high-quality red wine, much appreciated by wine lovers the world over.
- Blend of the estate's oldest vines (50 to 100 years old): 50% Grenache and LLedoner Pelut, 35% Carignan, 15% Syrah. Clay-limestone terroirs, mostly hillsides, ph > 9. Extensive green harvesting: green pruning, disbudding, trellising, leaf removal. Grapes harvested at perfect maturity. Sorting in the vineyard, then after de-stemming. Grapes transported in refrigerated trucks. Short pre-fermentation maceration in small stainless steel vats, at low temperature, with daily punching down and pumping over. Temperature control in the cap during the fermentation phase.
- Maceration for 20 to 25 days, with slow, gentle extractions. Aged for 12 months without racking in one- and two-wine barrels, with the remainder aged in traditional concrete vats. Bottled after 2 months' post-blending ageing. Naturally concentrated, but not excessive, very aromatic wine. The silky tannins give immediate pleasure, but the wine only shows its true potential after 3 years in bottle. Ideal ageing potential: 5 to 10 years.
CUVÉE STYLE:
The style of this wine can be described as powerful, concentrated and elegant. It is made from a blend of several grape varieties, including Grenache, Syrah, Carignan and Mourvèdre. The vines used to produce this wine are aged, which contributes to the complexity and depth of aromas and flavors.
TASTING :
