• "The 2007 Côtes du Roussillon Villages le Clos des Fées is mature, but it should hold at this level for a number of years. Rich black cherries and smoky-toasty oak have fused together into a wondrous whole; it's plush and full-bodied yet complex, nuanced and deceptively easy to drink. Drink this while waiting for the 2005 to arrive at a similar place in three to five years." 

THE ESTATE TELLS YOU ABOUT IT

Selected plots of old hillside vines on limestone-clay soil. A blend of equal parts of Syrah, Mourvèdre, Grenache noir, Carignan noir. Intensive work in the vineyards: removal of buds and laterals, bunch equalising, leaf-thinning. Search for optimum phenolic ripeness, adapted for each varietals and each terroir. The harvest is brought in and stores in refrigerated truck. Vinification is done in five hectolitre puncheons, de-vatted when warm, malolactic fermentation and ageing in 100% new oak barrels. All operations such as pumping-over, racking and barrel topping are done by hand, without pumps. Aged for 18 months on lees. Unfiltered. Powerful wine, concentrated, rich palate, exceptional creamy texture, yet fresh and focused. Delicious for a year after bottling, if one likes young and powerful wines, but needs to be decanted. Usually shuts-down the second year. Matures slowly and gradually acquires its character while retaining its vibrant fruit. Cellaring potential 8 to 15 years.

• Aeration: Some vintage wines, particularly the younger, more structured reds, may benefit from aeration before tasting. You can open the bottle a few hours before tasting, or use a decanter to allow the wine to oxygenate and release its aromas.
• Tasting: Take time to observe the wine's color, intensity and reflections. Then appreciate the aromas by gently inhaling them. Take a sip and let the wine coat your palate to discover its flavors and texture. Note the fruity, spicy, floral or mineral notes, as well as the wine's length and balance. Each Clos des Fées vintage will have its own characteristics, but overall, you can expect well-balanced, expressive and elegant vintage wines, reflecting the passion and expertise of the estate.
