ASSEMBLY : 70% Grenache - 15% Syrah - 15% Mourvèdre - Carignan - Counoise
VINIFICATION : Manual harvest with sorting in the vineyard and in the cellar. De-stemming at 95% (5% in whole bunches), then fermentation separately in concrete tanks by indigenous yeasts. Remontages and délestages are carried out during the entire maceration of the grapes (30 days). Harvesting began on September 12 for the Syrah, September 18 for the Grenache and October 3 for the Mourvèdre.
AGEING : In tuns and demi-muids for 14 months.
TASTING : The Bouquet des Garrigues, the iconic wine of the Domaine, is a sexy, balanced and silky wine. It has a bright ruby color. The nose is magnificent, with aromas of Provence herbs, black cherry, black currant, peppery garrigue and licorice. In the mouth, we find the power of the South combined with a lot of freshness and finesse. What is striking is the silkiness of this wine. It is a deep and accomplished wine, which is difficult to resist.
Pairings: Tajine of lamb confit. Kobe beef rib with fleur de sel. Tian of vegetables and red tuna. Ventoux goat cheese, old bread cooked in a wood fire, olive oil.
