Order wine : Clos du Mont-Olivet 2012
Chateauneuf du Pape
- Score : 90/100 Wine Spectator
- Cellaring potential: Drink now.
- Tasting: A perfumed t-style, with tea and incense leading the way to softly textured raspberry, black fig and gooseberry notes. A perfumed note emerges on the mineral finish, with a very fine structure.
- Terroir: The grapes come from a wide variety of localities: Montalivet, Les Blachières, Coste Froide, Bois Seneseau, Palestor, Bois Dauphin , Pied de Baud, Les Bousquets, Les Parrans, Les Marines, Le Bois de la Ville, Cansaud, Les Gallimardes and Les Serres. They extend from the north to the south of the Appellation. The soils are mainly composed of quartzite colluvium, marine clay, sand and mollassic sandstone.
- Blend : 80% Grenache, 10% Syrah, 6% Mourvèdre, 4% Cinsault, Counoise, Vaccarèse, Muscardin, Terret noir, Picpoul noir.
- Vinification : The vats are filled by gravity with a partial destemming. The work of the wines is done without seeking a maximum extraction but privileges more the elegance and the freshness. The free-run juice and the press juice are aged separately, mainly in concrete vats where they carry out their malolactic fermentation. After blending, the wine is aged in tuns.
- Alcohol content : 15 %.
