Description: "Situated on the hillside of Corton Grand Cru at an altitude of 273 metres and a former stone quarry, the climate of "Les Perrières" is perfectly exposed to the south-east. Our Cuverie Corton Grancey is embedded in this terroir, whose brown and red clay soils produce intense and gourmet wines. The vines, which are rather old, are traditionally cultivated by the winegrowers of Domaine Louis LATOUR. Severe pruning allows for later harvesting and ensures a good level of maturity and richness of the grapes".
Vinification & Maturing : Traditional fermentation in open vats, 100% malolactic.
Ageing: 10 to 12 months in 100% new oak barrels.
Barrels: Tonnellerie Louis Latour, French oak, medium toast
Tasting note : The sublime garnet red colour reveals the character of our Corton Grand Cru "Perrières" 2011. On the nose, cherry aromas can be guessed while hints of liquorice gradually appear. On the palate, this wine is round and reveals greedier notes, accompanied by aromas of undergrowth and cherry".
Food and wine pairing : Beef bourguignon - wild boar stew - matured cheeses
