Second grand cru classé - AOC Saint-Estèphe
Château Cos d'Estournel, owned by Michel Reybier, is a 91-hectare wine-growing estate located in Saint-Estèphe in Bordeaux.
The lord of Saint-Estephe, the flagship of its appellation, is solidly anchored in its classification, which will make it a potential candidate for the rank of first growth when the time comes. The high proportion of Merlot can be felt on tasting, without distorting the wine's characteristics. What are the characteristics of Château Cos d'Estournel?
Château Cos d'Estournel has a long and prestigious history as a Bordeaux wine estate in the Saint-Estèphe appellation. Louis Gaspard d'Estournel gave his name to the estate in 1811. Château Cos d'Estournel was one of the first Bordeaux châteaux to bottle, label and sell its own wine. This practice continued until the death of Louis Gaspard d'Estournel in 1852.
The vineyard located near the border between Pauillac and Saint Estèphe at the southern tip of the Saint Estèphe appellation has changed hands many times. Indeed, it was owned by the Charmolue family, owners of the neighbouring estate of Château Montrose, until 1917, when Fernand Ginestet bought it. In 2000, Château Cos d'Estournel was bought by Michel Reybier who hired Bruno Prats' son, former owner Jean-Guillaume Prats, to manage Cos d'Estournel, while keeping things in the family.

The new cellars of Cos d'Estournel
The gleaming new cellars of Château Cos d'Estournel include 84 isothermal stainless steel tanks of conical shape. The tanks are specifically designed for thermal inertia. The 84 tanks have a wide range of capacities to match the needs of each vineyard plot.
Tank sizes range from 19 hectoliters to 115 hectoliters. 12 of the smaller tanks, which are designed to handle between 19 and 60 hectoliters, have two levels in each tank.
In other words, these small vats are the equivalent of twice the number of vats, allowing for the most precise parcel-based winemaking in Bordeaux. Each of the vats is doubled, which allows for more precise temperature control. None of the vats use an internal heating coil.
Perhaps the most inventive part of the winery is the four 100 hectoliter elevator tanks, or wine elevators, which replace the pumps used in traditional pumping-over and racking processes, which introduce air and often destabilize the marc.
From the moment the grapes arrive, everything travels by the flow of gravity. Jean Guillaume Prats calls this process pumping over without pumping. What happens is that the wine is released from the main tank where the skins remain. By gravity, the juice is then moved into smaller tanks that are on wheels.
These smaller tanks are sent to the glass elevators where they go up one floor and return to the tank by gravity to cover the skins. This process is still unique to Château Cos d'Estournel.
