Tasting by Robert M. Parker : "A word of admiration and praise for Bruno Prats is in order. One of the most forward-thinking producers in Saint-Estephe, Prats is never satisfied with making exceptional wines. In recent years, he has improved Cos d'Estournel, already one of the great wines of Bordeaux, by eliminating all filtration during bottling and replacing the standard paper label with a plastic one that won't disintegrate in damp cellars. In addition, the quality of his wines in such difficult vintages as 1992 and 1993 has been remarkable. Readers should also note that a second wine, the very well packaged Les Pagodes de Cos, was introduced with the 1994 vintage. It appears to be an excellent second wine. One of the most successful Medocs of the vintage, the 1993 Cos d'Estournel exhibits an opaque dark purple color and a heady, sweet, pure black currant bouquet that roars in the glass. With surprising richness, fatness, and glycerin, tasters would never suspect that this medium-bodied, elegant, yet authoritatively flavored wine came from such a difficult vintage. The wine's low acidity and roundness guarantee it a 12-14 year lifespan. It is a splendid success in an irregular vintage. Cos d'Estournel clearly produces wines that often have first-growth potential." RP. in 1997
TERROIR
The 100 hectare vineyard of Château Cos d'Estournel is planted with 56% Cabernet Sauvignon, 40% Merlot, 4% Cabernet Franc and 1% Petit Verdot. This shows a slight increase in the amount of Merlot planted in the vineyard. The vineyard, located on the hillside of Cos, has gentle elevations of up to 20 metres at its summit. It is located near the border between Pauillac and Saint Estephe, at the southern end of the Saint Estephe appellation. The vines are on average about forty years old. But the estate also has some very old Merlot vines, which are over 100 years old. Part of the terroir is located on the hill of Cos, where some of their best terroirs are found.
SERVICE
Château Cos d'Estournel is best served at 15.5°C. The cooler, almost cellar temperature gives the wine more freshness and energy. Young vintages can be decanted for 2-4 hours. This allows the wine to soften and open up its flavour. Older vintages may need a little decanting, just enough to remove sediment.
FOOD AND WINE PAIRING
Château Cos d'Estournel goes well with all types of classic meat dishes, veal, pork, beef, lamb, duck, game, roast chicken, braised and grilled dishes. Cos d'Estournel also goes well with Asian dishes, hearty fish dishes such as tuna, mushrooms and pasta.
