• AOC: The Coulée de Serrant alone is a controlled appellation.
• Total surface area: 7 hectares, steep slopes facing south.
• The vine: Planted in 1130 by the Cistercian monks and has remained in the vineyard ever since. The soil is partly worked by horse.
• Average age of the vines: 35/40 years old, the oldest vines are 80 years old.
• Density: 4800 to 6700 plants/hectare, most of them trellised, some not.
• Grape variety: chenin blanc in massal selections.
• Yield 20-25 hectolitres/hectare (40 authorised).
• Number of bottles: between 20000 and 25000
• Soil: Schist, Quartz
• Biodynamics: Biodynamic agriculture since 1981 with control.
• Maturing: In oak barrels for 6 to 8 months. New wood limited to 5%. Native yeast. No chaptalisation, no re-ageing, no temperature control. 1 to 2 rackings. Sticking. Very light filtration called "pre-filtration" most of the time. Light sulphiting before bottling.
