- Tasting notes: Defaix's Chablis 1er Cru Côte de Léchet emerges from the glass with aromas of honeycomb, golden orchard fruit, apricot, spices and dried white flowers. Quite powerful, full-bodied and satiny, this is a lively, saline wine with a delicately nutty finish.
- A wine with a typical minerality reflecting its steep slope. Its length and power reveal this exceptional vintage where ripeness is combined with an overabundance of overripe fruit. Fortunately, the minerality of the soil lends depth to the wine, without which it would be reminiscent of the very rich wines of the Côte d'Or.
- A fine match for snacked scallops, sole meunière, sea bass, lobster, turbot, emperor and white meats such as poularde or veal chop with cream and mushrooms or even most cheeses, including old Comté.
