Presentation : The cuvée Vieilles Vignes owes its complexity to the blending of all the plots of old vines of the domain, with an average age of 55 years. The objective is to harvest a grape of perfect quality. Therefore, we thin out the grapes and remove the leaves so that the grapes get the maximum amount of sunlight. Only when we reach an optimum maturity, the manual harvest can begin!
Vinification and Maturing: The winegrowers harvest perfectly healthy grapes at optimum maturity. The harvest is destemmed and sorted a second time in the cellar. No input and indigenous yeasts! The vinification remains traditional, after a vatting period of 3 to 5 weeks (depending on the vintage), the wine is drawn. The old vines are then aged for 12 to 18 months in demi-muids (500L barrels from Atelier Centre France and Saury), 1/4 of which are renewed each year.
Food and wine pairing : Red meat, meat in sauce, pan-fried mushrooms with parsley. Ideal service at 16°/17°C.
