- Grape Variety: Petit Manseng
- Location: Caubeigt (3 ha used)
- Exposition: South-West and West. Year of Plantation: 1977 to 2000
- Soil: Clayey silt & pebbles. Slope: 10 to 20%. We use our parcels that keep the most freshness to make this wine.
- Yield : 20 hl/ha
- Harvested by hand by sorting at the beginning of November
- Vinification : Very slow pressing of whole bunches. Light settling. Indigenous yeasts. Vinification in wooden containers of different volumes.
- Aged on fine lees or total lees in wooden containers for 8 months then 4 months in stainless steel tanks.
- Food pairing : Jurançon in all its elegance. Both rich and fresh, exotic and candied, far from wines that are too syrupy, it will accompany pan-fried foie gras, roast poultry, desserts with fresh fruit, chicken curry, cheeses with character or simply as an aperitif. Decanting recommended
- Ageing : 5 to 15 years
