- Tauzy : [tauzin oak] Oak endemic to the Pyrenees
- Grape varieties : Petit manseng ; gros manseng ; petit courbu. Year of plantation from 1991 to 2012.
- Location: Tauzy.
- Exposure : East. Cool plot which allows us to push the ripeness without the risk of developing over-ripe aromas.
- Soil: Ferric Grèp (clayey silt with many degraded ferric pebbles)
- Yield: 35hl/ha
- Harvested by hand in the last two weeks of October. We only pick the ripe grapes, not the ones that have been raisined.
- Vinification : Very slow pressing in whole bunches. Indigenous yeasts. Vinification mostly in old wooden containers of different volumes.
- Aged on fine lees for 8 months in wooden containers, then 3 months in stainless steel tanks.
- Food pairing : This dry gastronomy wine combines power and finesse and will sublimate smoked fish, grilled sardines, scallops, poultry in cream sauce and ewe's milk cheese from the Pyrenees.
- Decanting recommended
- Ageing : 5 to 10 years
