Tuffeau’ limestone slopes.
Vinification
Direct pressing of whole bunches after manual harvesting.
Only the core of the grapes is put into the press and taken directly down to our tuffeau cellars.
Fermentation without sulphur follows the seasons.
Ageing
15 months in tuns and 500-litre oak barrels, then 6 months in stainless steel vats.
