Triple Zéro - La Taille aux Loups - Jacky Blot
Appellation : Montlouis-sur-loire.
Grape variety : 100% Chenin.
Age of the vines: more than 50 years old.
Soil : Clayey limestone and siliceous clay, on limestone bedrock.
Vine management. Ploughed vines, short pruning 6 to 8 buds, 4 spurs maximum per vine. Uncertified organic cultivation.
Harvest : Manual, grapes sorted on the table. Potential richness 12°, 12.5°. Transport of the harvest in crates. Yield between 3o and 4o hectolitres per hectare.
Vinification
Zero chaptalization : Pneumatic pressing without spinning, descent of the juices by gravity. Very slow fermentation without yeasting or chaptalisation in old barrels (5 to 1o years old).
Zero liqueur de tirage : Transfer of the juices in bottles when 1o to 12 g of sugar remains to ferment, (indigenous yeasts exclusively). Stay in bottle: 18 to 24 months.
Zero liqueur d'expédition When disgorging, the maturity of the grapes allows to avoid adding liqueur d'expédition. The level of the bottle is made with the same wine.
Service: This sparkling wine a wine first, aeration will be necessary and beneficial. Serving temperature 10 to 12°.
Food & Wine pairing: It can be enjoyed at any time, perfect as an aperitif, where the total absence of liquor leaves the mouth feeling very fresh. It can accompany a whole meal, a long evening or quench your thirst on a summer afternoon.
