WHAT THE ESTATE HAS TO SAY
All Montcalmès vineyards are organically grown, without the use of herbicides or pesticides. Grapes are harvested by hand, with very low yields (20 to 25 Hl/Ha). The grapes are destemmed and crushed, then undergo a 30-day maceration with regular punching of the cap. The grapes from each vineyard are vinified separately by variety. The wine is then aged in one- to three-year-old barrels for 24 months, again separated by grape variety and vineyard. Frédéric then blends the wine and lets it rest for two months in vats before bottling. The wine is bottled unfiltered, on the waning moon. This wine is certified organic by Ecocert for Europe.
TASTING
Tasting notes: The nose of this wine is full of red cherry fruit, perfumed with hints of violet flowers. On the palate, the wine is full of blackberry, blackcurrant and black cherry flavors, accented by subtle notes of garrigue spices. The finish is long and persistent, with soft, velvety tannins. Although the wines are suitable for aging, it is the purity and elegance that are the hallmarks of Domaine de Montcalmès that make the wine so enjoyable in its youth.
