VITICULTURE
Guyot poussard pruning respecting the sap flow

Manual leaf removal, removal of the internodes to encourage aeration of the bunches and ensure optimum ripeness.

WINE MAKING
From the moment the grapes arrive in the cellar, they are handled gently and with respect for the fruit
Vatting in open concrete vats using a conveyor belt. Protection of the grapes with dry ice as soon as they are vatted to protect the oxidation of the juice and to control the temperature of the harvest.
Cold maceration for more or less 7 days depending on the profile of the vintage
Natural fermentation thanks to indigenous yeasts over a period of about 15 days
The number of pumping over and punching of the cap is dictated by the profile of the vintage as well as by the daily tasting of the juice obtained.
Devatting when all the sugars have been broken down into alcohol
The free-run juice is racked into 228-litre barrels (1/3 two wines, 1/3 one wine, 1/3 new) from different coopers.
Aged for a minimum of one year to allow malolactic fermentation to take place naturally in the casks.
Racking, fining if necessary, then blending of the different barrels with a rest period of about 6 months.
TASTING
"Beaux regards" is a soft, stony terroir full of fossils. I created Biorga to identify the essences of this particular terroir in bottles. This Pinot with juicy red fruit aromas is elegant and slender. Its long ageing in wood gives it a delicate silkiness with a beautiful roundness.
